Renowned Tokyo ramen institution Ramenya Shima is set to open its first international location at Sugar+ in March 2026. Known for its exceptional quality and limited daily servings, the restaurant will continue its signature approach in Hong Kong by offering only a select number of bowls each day, preserving its commitment to craftsmanship and precision.
Since launching its flagship in Shibuya in 2020, Ramenya Shima has earned a place among Tokyo’s top ramen destinations. Under the direction of Chef Hiroshi Morishima, the restaurant has consistently ranked in the top three on Tabelog and received multiple accolades, including the Tokyo Ramen of the Year Newcomer Grand Prize and several Tabelog Bronze Awards. Its sustained rating above 4 further cements its reputation as a must-visit culinary destination.
At the heart of Ramenya Shima’s menu is its refined approach to tanrei-style ramen. Guests can choose from three signature broths: a rich and layered shoyu (soy sauce), an aromatic white shoyu enhanced with truffle elements, and a delicate shio (salt) broth that highlights the natural flavours of premium ingredients. Each soup is crafted from a complex base of nearly 30 components, including Japanese chicken, seafood, and vegetables, resulting in a clear yet deeply umami-rich profile.

The noodles, made fresh without additives, are equally distinctive. Crafted from a blend of five flours including premium Hokkaido wheat, they offer a smooth texture with a satisfying bite, perfectly complementing the nuanced broths. Each bowl is completed with carefully prepared toppings such as handmade chashu, shrimp wontons, and pork wontons, adding layers of texture and flavour.
The new Hong Kong space blends modern and traditional Japanese design, featuring warm wooden interiors, counter seating, and a welcoming atmosphere for up to 24 guests. Located in the vibrant Causeway Bay district, the restaurant reflects both Tokyo’s spirit and Hong Kong’s dynamic dining culture.
